Bai Mu Dan is one bud with one to two leaves. Gong Mei takes one bud with two to three leaves. Shou Mei is mature leaf from later plucking.

Where is white tea demand concentrated?
White tea demand is concentrated in specialty channels in Russia, North America and East Asia, where the category is bought by origin name. Fuding in Ningde and Zhenghe in Nanping, Fujian, are the reference origins.
It is also a supply story. White tea requires no rolling machinery and no fixation step, which makes it accessible to smaller gardens, but it is completely dependent on weather during the withering window.

Grade by plucking standard, origin county, harvest window, moisture at or below 7,0%, and whether the tea ships loose or compressed. Compressed formats — 100 g, 300 g and 350 g cakes — change both the storage brief and the HS treatment once packed into units of 3 kg or less.
White tea can be aged, but only if it stays dry and free of odour, which makes storage conditions a contract term rather than a courtesy.
