By plucking standard. White tea is withered and dried without rolling or fixation, so the processor has far fewer levers than in green or oolong production. Bai Hao Yin Zhen is single unopened buds. Bai Mu Dan is one bud with one to two leaves. Gong Mei takes one bud with two to three leaves. Shou Mei is mature leaf from later plucking.

Where is white tea demand concentrated?
White tea demand is concentrated in specialty channels in Russia, North America and East Asia, where the category is bought by origin name. Fuding in Ningde and Zhenghe in Nanping, Fujian, are the reference origins.
It is also a supply story. White tea requires no rolling machinery and no fixation step, which makes it accessible to smaller gardens, but it is completely dependent on weather during the withering window.

White tea can be aged, but only if it stays dry and free of odour, which makes storage conditions a contract term rather than a courtesy.
