How do you brew white tea, and how many times can it be steeped?

Brew white tea with water at about 80 to 90 °C, using 3 to 5 grams of leaf per 250 ml, for 3 to 5 minutes; silver-needle buds prefer the cooler end, fuller Bai Mu Dan and Shou Mei the hotter. White tea can be steeped three to six times, lengthening each infusion as the leaf opens.

Gongfu style — more leaf in a small pot with short infusions of 30 to 60 seconds — brings out sweetness and texture. Aged Shou Mei and pressed white tea cakes tolerate near-boiling water and can even be simmered briefly for a dark, honeyed cup. White tea is usually drunk plain; its light, sweet taste is easily hidden by additions.

Is white tea good for you, and can you drink it every day?

White tea is a pleasant, low-calorie drink that most healthy adults can enjoy every day, but research on specific benefits is limited, largely from laboratory and small human studies. The realistic cautions are caffeine and, if drunk with meals, reduced absorption of iron from plant foods.

White tea does not dehydrate you at normal intakes; like other tea, it counts towards daily fluids. It is not alkaline in any meaningful sense: brewed, it is mildly acidic to near neutral, and no drink changes the body’s blood pH. Blends of white tea with mint, rose, lychee or hibiscus change the flavour, not the evidence.

When is the best time to drink white tea, and how much?
